    LET'S EAT! GIMME RECIPES!

    Food has been a real challenge for me in Rona Times. I'm vegetarian and mostly cook from scratch (too lazy to make my own bread, pasta, or cheese; also I only cook for 2). I've just felt really uninspired these last 2 years and it's a struggle to consistently make and eat healthy, tasty food. Give me some good recipes! Let's get healthy! 💗

    Recently bought a vegetarian shepherds pie at Wards Farm in Sharon, MA and it was delicious. All kinds of vegetables (onions, celery, mushrooms, squash, carrots, peas) on the bottom of a round disposable baking dish and topped with sweet and regular mashed potatoes. Oh ingredients list said ‘Herbs of Provence‘? Working on my own version…

    @DeadIdiots Oooh, yummy, thank you! I used to make a version with layers of diced vegan Boca burger, tomatoes, green onions, jalapeños, and mashed potato. Sort of a Mexican take, I guess.

    Black Beans and Rice

    This is a one dish meal!


    2 cloves garlic minced

    1/2 cup diced onions

    butter or oil to sautee them in

    1/2 cup of frozen or fresh corn kernels

    1 can black beans

    1 cup - 1.5 cups of Jasmine Rice

    2 - 3 cups of water


    1/2 tsp cayenne pepper

    1/2 tsp oregano

    1/4 tsp black pepper

    1/2 tsp salt

    3/4 tsp red pepper flakes


    Optional: Sliced jalapenos ~1 TBSP


    1. Sautee the onions and garlic in butter about 5 minutes

    2. Add Beans with Juice in the can

    3. Add Seasonings & Jalapenos & corn

    4. Add Rice & Water, Mix it all together

    5. Cover and Bring to a soft boil

    6. Turn to Low and simmer for 20 minutes

    7. Turn off Heat and let sit for 10 minutes

    8. Stir and serve


    The measurements aren't exact, adjust for your own spiciness level. I like it spicy! However much rice you add, use double the water. I serve garlic toast and a sliced tomato on the side. It is also good wrapped in flour tortillas.


    It's quick and easy plus you only use one pan.
